  3. While the roots roast, rinse the farro under cold water, then combine it with the chicken broth in a medium saucepan; bring to a simmer, cover and cook until tender, 20–25 minutes, then drain any excess liquid and fluff with a fork.
  4. Make the honey-lemon marinade by zesting the lemon and juicing it into a bowl, then whisking in the honey, Dijon, remaining 1 tablespoon olive oil, minced garlic, remaining thyme leaves stripped from stems, 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
  5. Place the chicken breasts between two pieces of plastic wrap and gently pound to even thickness (about 3/4 inch). Put the chicken in a shallow dish, pour half the marinade over it, turn to coat, and let sit at room temperature for 10–15 minutes while the roots and farro cook.
  6. Heat a large ovenproof skillet over medium-high heat. Add a thin film of oil if needed and sear the marinated chicken 3–4 minutes per side until golden.   7. Remove the chicken from the oven and rest for 5 minutes. Meanwhile, finish the roots with a squeeze of lemon and a sprinkle of the remaining parsley; warm the farro if needed and taste to adjust seasoning.
