Weeknight Sheet-Pan Sausage & Broccoli with Crispy Parmesan

A fast, low-carb tray bake that pairs spicy, caramelized sausage with tender-crisp broccoli and a shower of golden Parmesan and lemon for brightness.

This is the kind of sheet-pan dinner that shows up when you want big flavor with very little fuss. Sausage and broccoli roast together so the meat browns and the florets get those deep, toasty edges while staying tender in the center — all on one rimmed pan and finished with a sprinkle of grated Parmesan that turns lacy and crunchy in the oven.

The contrasts are what make it sing: savory, slightly spicy sausage coins, garlicky olive oil clinging to browned broccoli tips, and a hit of lemon zest and juice to cut through the richness. Red pepper flakes add a wake-up call without stealing the show, and a scatter of fresh parsley at the end keeps the plate bright and pretty.

This dish is practical as well as tasty. You can slice the sausages and trim the florets ahead of time, then toss everything with oil and seasoning just before roasting — lining the pan with foil or parchment makes cleanup nearly effortless. Leftovers reheat beautifully and are great over cauliflower rice or a simple bed of greens for a low-carb lunch.

Make it your own: swap mild for hot sausage depending on how much heat you want, add extra garlic if you like, or finish with more lemon if you want a brighter bite. It’s a reliably quick, everyday dinner that feels a little celebratory thanks to that crisped Parmesan finish.

Ingredients

How to Make Sheet-Pan Sausage Broccoli Parmesan Tray

  1. Preheat the oven to 425°F (220°C) and line a large rimmed sheet pan with foil or parchment for easy cleanup.
  2. Slice the sausages into 1-inch coins (or halve if using links); trim large broccoli crowns into bite-size florets and pat them dry to help them brown.
  3. Mince the garlic, zest the lemon and juice it, then in a large bowl combine the broccoli, garlic, olive oil, lemon zest, half the lemon juice, kosher salt, black pepper and red pepper flakes; toss to coat well.
  4. Add the sausage pieces to the bowl and toss once more so everything is evenly coated with oil and seasoning.
  5. Spread the sausage and broccoli in a single layer on the prepared sheet pan, leaving a little space between pieces so they roast instead of steam.
  6. Roast on the middle rack for 20–25 minutes, stirring once halfway through, until broccoli edges are browned and sausage reaches an internal temperature of 160°F (71°C) and is cooked through.
  7. Remove the pan from the oven, sprinkle the grated Parmesan evenly over the hot sausage and broccoli, then return to the oven for 2–3 minutes or broil briefly (watch closely) until the cheese melts and turns lightly golden.
  8. Finish with the remaining lemon juice and chopped parsley, adjust seasoning to taste, let rest 2–3 minutes, then serve warm straight from the pan.
