  4. Heat a large heavy skillet (cast-iron preferred) over high heat until very hot, then add 1 tbsp olive oil and swirl to coat.
  5. Working in a single layer and in 2 batches to avoid crowding, add steak bites and sear without moving 2–3 minutes until browned, flip and sear another 1–2 minutes for medium-rare to medium; remove browned bites to a plate.
  6. Reduce heat to medium, add butter to the skillet and when melted add minced garlic and red pepper flakes; cook 30–45 seconds until fragrant but not browned.
  7. Stir in soy sauce, Worcestershire sauce and juice from half the lemon; return steak bites to the pan and toss in the garlic-butter sauce 1–2 minutes to finish cooking and coat.
