  2. Peel the onions and slice into 1/2-inch rings; separate into individual rings and set aside.
  3. In a shallow bowl combine the flour, baking powder, 1/2 tsp kosher salt, 1/4 tsp black pepper, smoked paprika, garlic powder, onion powder and cayenne; toss to blend.
  4. In a second bowl whisk the eggs with the milk until smooth.
  5. In a third shallow bowl mix the panko, cornmeal, remaining 1/2 tsp kosher salt and remaining 1/4 tsp black pepper; drizzle in the olive oil and toss so the crumbs are evenly moistened.
  6. Working in batches, dredge each onion ring in the seasoned flour (shake off excess), dip into the egg wash, then press into the panko-cornmeal mixture to coat thoroughly. Place coated rings on a plate or tray in a single layer.
  7. Arrange a single layer of rings in the air fryer basket (do not overcrowd; you will likely need 2 batches). Lightly brush or spray the tops with a little extra olive oil and cook at 400°F for 4–6 minutes, then flip rings, brush again and cook 3–4 more minutes until golden and crisp.
